What exactly is Koine Greek?

It's often said the NT is written in a Greek dialect called Koine Greek.
I'm starting to wonder if Koine Hebrew isn't a equally correct term...

For me it's sure the NT was largely written in Hebrew (many say Armiac but that I'm doubting that too)
Many church fathers give hints about the language the NT was written in. They quite often mention the first 4 books and almost always Matthew.
"...he wrote in their tongue",  "... in their language", "In the Hebrew letter", etc.

What makes a language? We can discus that in great depth but I think for this topic I can mention a few common points all can agree on.
1] Words. Obviously every language has words written in a certain way with a certain meaning.
2] Grammar. Basically that are the rules that determine word order (among other things)
3] Cultural bagage. Sayings require a deeper understanding of the language than a simple translation of words. Saying (sometimes) are little parables.

So what exactly makes a language a language or a dialect?Just the words?

If we take the NT we see:
1] Words -> Greek
2] Grammar -> Hebrew
3] Cultural bagage -> Hebrew

According to some scholars Koine Greek is missing about everything normal Greek has.
It's nothing more than a 1 on 1 translation of Hebrew to Greek words.
The NT Greek is missing 'flow' within chapters, paragraphs and often within a single verse.
But when doing a one on one Greek to Hebrew translation suddenly we have a text with correct grammar and a good flow.

So my thought is this:
For a good NT translation we need a simple program that does a one on one translation from untouched Greek to Hebrew.
Then let a Hebrew scholar translate that to English.

Scholars love to go to war with their exegesis weapons.
I think that's often a waste of time because it makes no sense to build a scholarly work on a translation of a first grader....

  knowledge of good and evil/mix..is like flipping a coin/condemnation eternally/or mercy eternally. Spirit of Christ opens the seal..and leads unto the tree of life

  where there is NO condemnation[no law/grace fluctuation..as to who why when where what,how divisons] wrestling that two=sided coin..damnation/salvation

  Jacob wrestled that angel[messenger] all night...and refused to let himgo..until he blessed him/though his thigh was 'put out of joint' 

  he saw a stairway/ladder unto heaven and the angels of God ascending and descending[Christ/heaven opene/seals opened]

  Now struggling with the messenger will make your thigh out of joint/just as limping along on two opinions make you unstablePsalms 48;8 and 87;5
