Ooooh. I just got this Irish recipe in my inbox and I am going to do it this very night... using Canadian bacon, though.  :banana:

Irish Bacon Cabbage Soup
Original recipe makes 4 servings

    1/2 pound Irish bacon, diced

    2 large potatoes, peeled and cubed

    1 (15 ounce) can diced tomatoes with juice

    1 cup chicken stock, or as needed

    Salt and black pepper to taste

    2 cups thinly sliced dark green cabbage leaves


Directions

    Place bacon in a large, deep stockpot or saucepan. Cook over medium high heat until evenly brown. Drain off any excess fat.
    Stir in potatoes, tomatoes, and enough chicken stock to cover. Season with salt and pepper. Bring to a boil, reduce heat and let simmer for 20 minutes, or until potatoes are tender.
    Stir in cabbage and allow the soup to simmer for a few minutes longer before serving.

Tapioca!!!  Each time I see that word, my taste buds are re-energized as I smilingly reflect on my most favorite dessert as youngster.  Tapioca pudding... I liked it so much I convinced my youngest sister that the pudding was made with fish eyes... she quickly pushed her bowl of tapioca my way... saying "Ugh, I don't want to eat fish eyes!!" AND I got more of my favorite dessert!!! :)

BTW why the username "Tapioca"?

HUMMUS!

Too easy to make fresh to be paying good money for store-bought!

1 can chick peas, with juice
2 tbsp raw sesame seeds
2 tbsp olive oil
1/2 tsp salt

In a small sauce pan, fry the sesame seeds in the olive oil over low-medium heat until lightly golden (NOT brown).  Let cool slightly.  Dump chick peas in blender, juice and all, and then dump in the sesame seeds, oil and all, and the salt.  Then you may wish to add any combination of the following ingredients:

1/2 clove garlic, pressed
1 tsp paprika
1 or 2 leaves of fresh basil
2 tbsp sun dried tomatoes, chopped
1 or 2 tsp lemon or lime juice
...or just use your imagination, and let me know how you like it!
